First I must apologize for not keeping up with this blog! So many days I think “I need to go blog”! And then a number of things jump ahead on my calendar.
But there is something that I have been dying to talk about! Appearance vs Taste in cake pops. In my opinion, there are two main culprits that exist. One is fondant and the other is dryness. I hear people talk about making their cake and frosting drier so that the cake pop stays on the stick better. But I say to that a big fat “WHY???” My cake and frosting mixture is so moist that it is often the first thing people tell me “this cake pop is the most moist I have ever had”, and you know what? It stays on the stick. So why do so many cake pop makers compromise a moist cake and frosting mixture for a purpose that can be achieved with just a bit more patience? Selfishly, I am glad that they don’t, because each time someone has my cake pops, I will win them over!
My second pet peeve is much larger and more annoying, it is the fondant on the cake pop. I get it, you want your cake pop to be drop dead gorgeous and fondant can do that. But have you ever eaten fondant? Yes, I know that it is edible, but again, have you ever eaten it? YUCK!! So your cake pop is beautiful, but once you pull off the fondant you are left with a couple of bites of cake, that is probably falling apart. How pretty is that? Fondant is great for large cakes, I totally get it! But a cake pop is a totally different beast, made with totally different ingredients.
A cake pop is all about creating a super dense, moist mixture of cake and frosting, then covering it with delicious chocolate. There are so many great ways to decorate a cake pop that allow it to be eaten completely, with each bite getting better and better. I have actually just purchased an edible sugar sheet printer. It is allowing me to do all types of intricate designs, logos, and phrases and fit them onto a cake pop!! I have had quite a few taste testers (they aren’t hard to come by) and they all say that they expected the sugar piece to change the flavor or texture, but it doesn’t. This is just one new way to make beautiful cake pops, that are 100% deliciously edible!
